What’s the deal with nitrates in food?

Nitrate and Nitrite rich foods are often seen as bad for our health but the reality is a bit more complex.

They are not all bad – they are used in medicines and provide many health benefits, including the prevention of food-borne illness (2,14,30,32,33,34).

Despite the fact that our brains tend to think natural is better, our body doesn’t care whether they are from a natural or an artificial source (21).

Cold cuts are not “toxic” but are best consumed in moderation alongside a balanced diet (30).
